Pickled herring

Class-appetizer Sub-holiday Culture-Swedish Servings-8.00
3                        salt herring
1          cups          white vinegar
1/3        cups          water
2/3        cups          sugar
2          tsps          allspice, crushed
1          tsps          allspice, whole
3                        bay leaf
Clean and skin herring.  Remove backbone. Cut into 1/2 inch pieces.  Soak
five or six hours, changing water often (some people suggest using milk).  
Drain, then add the remaining ingredients.
